green soup

Green soup is just what you need at the end of a long winter. Packed with nutrients, it gives us a lift and supplies the energy we need. Best of all it only takes about 10 minutes from prep to cooking time

Ingredients

3 x jumbo tins butter beans or 6 small tins. Canellini beans also work.

handful coriander seeds

Olive oil

Vegetable stock

Garlic powder

2 x bags spinach

1 x bunch coriander

Method

In a large heavy bottomed pot, tip a glug of olive oil.

Fry the coriander seeds until brown and aromatic but be careful not to burn them.

Add the beans and a litre of water

Sprinkle 3 stock cubes into the soup

Add some garlic powder to taste

Cook for a few minutes

Add the spinach

Cook until wilted in

Blend the soup a bit so the beans are broken up

Add the coriander on top and some grated cheese if you fancy it.

Serve with bread
